The natural sweet briny flavor and tender yet firm texture of our hand peeled Chilean shrimp meat pair perfectly with the mango and avocado in this recipe. Not only are the flavors amazing it looks incredible. This dish will wow your guests.
1/2 Lb. Seatech Chilean shrimp meat
1 large mango, peeled and diced
1 large avocado, pitted and diced
1 jalapeno pepper, seeded, membrane removed and diced
1/4 cup Red onion, diced
1 Tbsp lemon juice
1 tsp lime juice
2 Tbsp lemon juice
1/4 cup minced cilantro
3 tablespoons extra-virgin olive oil
salt to taste
To make the dressing place all ingredients in a jar with a lid and shake to incorporate.
You will need a round chef form or a can with both ends removed. Place the form or can in the middle of the plate you will server the tower on. In a bowl toss the avocado in the tablespoon of lemon juice. Put one quarter of the avocado in the form and gently press down with the back of a spoon. In a separate bowl toss the diced mango in the dressing. Place 1/4 of the mango on top of the avocado in the mold and gently press down with the back of a spoon. Place one quarter of the shrimp on top of the mango in the form and gently press down with the back of a spoon. Now gently raise the form from the plate. You may need to press down a little with the back of a spoon while removing the form to keep everything stacked nicely. Now repeat for the the other three plates and serve immediately.
