This wonderfully refreshing Chilean shrimp Mexican cocktail makes a great starter or meal.
1 pound Seatech Chilean Shrimp Meat
24 ounces V8 vegetable juice (or tomato juice)
Lime juice from 3 limes
1 avocados chopped
1 cucumbers peeled, seeded and chopped
1 medium sweet onion chopped
1/2 bunch of cilantro, chopped
1/4 cup ketchup or more to taste
4oz Clam juice
Hot sauce to taste
Pour the V8, clam juice, ketchup, juice from two limes in a non reactive bowl and blend together. Add shrimp meat avocados, cucumbers, onion, cilantro, and hotsauce to taste. Cut the remaining limes into wedges to serve with the crab cocktail. Can be served immediately, but is better to let the flavors meld together in the refrigerator for up to three hours. Garnish with a whole shrimp, a sprig of cilantro and lime wedge when serving.
Serve with stick rice
Serves 8-10 as an appetizer 4-5 as a main course
