Mexican Red Shrimp Cocktail Recipe

A Delicious Refreshing Shrimp Starter

This wonderfully refreshing dish makes a great starter or meal.

 

Ingredients:

 

1 pound P&D Seatech Argentine Red Shrimp

24 ounces V8 vegetable juice (or tomato juice)

Lime juice from 3 limes

1 avocados chopped

1 cucumbers peeled, seeded and chopped

1 medium sweet onion chopped

1/2 bunch of cilantro, chopped

1/4 cup ketchup or more to taste

4oz Clam juice

Hot sauce to taste

 

Directions:

 

Boil shrimp in salted water for one to two minutes until just cooked through and then strain out and place in an ice bath. Once cooled reserve a whole shrimp per serving, cut the remaining shrimp into bite size pieces and place in non reactive bowl. Add the V8, clam juice, ketchup, juice from two limes, avocados, cucumbers, onion, cilantro, hot sauce and blend. Cut the remaining limes into wedges to serve with the shrimp cocktail. Can be served immediately, but is better to let the flavors meld together in the refrigerator for up to three hours. Garnish with a whole shrimp, a sprig of cilantro and lime wedge when serving.
