This Mussel Avocado Salad recipe makes for a quick, healthy and delicious meal or starter salad. The mussels, avocado and tomatoes are chuck full of nutrients and healthy fats including Omega 3 fatty acids from the mussels.
Makes 4 starter servings
1/2 pound cooked Seatech mussel meat
1 container cherry tomatoes, sliced in half
1 large avocado, pitted and cubed
1 large shallot, sliced thin
1 large garlic clove, peeled and crushed
2 Tbsp. white vinegar
1 tsp. basalmic vinegar
3 Tbsp. olive oil
salt & pepper to taste
Place the mussel meat, avocado and shallot into a large mixing bowl.
Whisk together the vinegars, olive oil, garlic and salt and pepper to taste to create a vinaigrette.
Pour the vinaigrette into the bowl with the other ingredients and gently mix to coat the avocado and mussels with the vinaigrette.
Divide among four salad plates and serve.
Serve with a nice crusty bread.
Serve on top of mixed greens.
