This pancetta basil wrapped mussel appetizer is easy to prepare and tastes wonderful. You can prep this recipe earlier in the day, cover under plastic wrap in the refrigerator and bake just before serving.
40 cooked mussel meats (approximately 1 pound)
1/4 pound very thinly sliced pancetta
40 small basil leaves
fresh ground pepper to taste
olive oil for basting
40 wood toothpicks
Soak the toothpicks in water. Preheat the oven to 500 ° F. Slices the pancetta into forty 3-inch-long strips. Roll a basil leave and mussel inside each strip of pancetta and skewer with a toothpick. Lightly brush the pancetta with olive oil and season with pepper to taste. Place on baking sheet and cook in the upper third of the oven. Cook one to two minutes on each side until the pancetta becomes crispy and server.
Serve on a tray with toothpicks.
